Celebrate Mother’s Day and treat your Mum or special person in your life with this nourishing Fig Almond Cake with Fennel.

The recipe for this delicious Fig Almond Cake with Fennel can be found in Amy Chaplin’s Whole Food Cooking Every Day cookbook. It’s filled with beautiful recipes that just happen to be gluten, dairy and refined sugar free. The cake is made from an almond flour base and sweetened with maple syrup. We served ours with fresh ricotta and honey, a match made in heaven.
