It’s that time of the year when the lemons are overflowing and you go searching for your favourite lemon recipes. We’ve combined our favourite cream cheese icing with a lemony cake that is not too sweet and just the right amount of tang. We hope you enjoy.



  • 1/2 cup butter softened
  • 1/2 cup of brown sugar
  • 2 TBS lemon zest
  • 3 eggs
  • 1/4 cup lemon juice
  • 1/2 cup sour cream
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder


  • 1 pack cream cheese
  • 1/2 cup softened butter
  • 1 cup icing sugar
  • 1/2 tsp vanilla
  • Pistachios for serving (optional)


  1. Pre-heat a fan forced oven to 170 and either grease or line your cake tin, we used our enamel baking tray from the Mind Pop range.
  2. Beat together 1/2 cup butter with the sugar and lemon zest until creamy.
  3. Add eggs and continue to beat
  4. Add sour cream, vanilla and lemon juice.
  5. Sift in flour and baking powder and gently mix until ingredients are combined.
  6. Bake for 20 – 30 minutes until a skewer comes out clean and cake is golden.
  7. To make icing beat cream cheese and butter until smooth and creamy. Add icing sugar and vanilla and beat until combined and light and creamy.
  8. Wait until the cake is cooled before icing and sprinkle with chopped pistachios.
