If you are not already aware of Julia Busuttil Nishimura’s recipes, do yourself a favour and check her out. Based in Melbourne, her recipes are all about simple food using seasonal and flavourful ingredients. Her recipe for this Miso Eggplant Rice Bowl pictured did not disappoint! A delicious mid-week meal and if you have leftover eggplant like I did then it makes a great addition to a salad for lunch the next day!

Miso and eggplant are a match made in heaven and you can really add any greens you have handy to this versatile dish. We also added edamame, which are so handy to have in the freezer for meals like this or a healthy snack!.
