Davidson Plum Marshmallows Posted in: Recipes – Tags: ,

These Davidson Plum Marshmallows are soft, sweet and oh so delicious! Dunk them in a hot chocolate, chop them up to make a next level rocky road or enjoy them on their own! We used local Davidson Plum Powder from Byron Bush Food which really balanced out the sweetness with its delicious tart, tangy flavour.


  • 3 TBS of grass fed gelatin – we use Nutra Organics
  • 1 cup of water
  • 1/2 cup rice malt syrup
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 2 tsp Davidson Plum Powder – we use Byron Bush Food
  • Tapioca flour for dusting
  • Optional – icing sugar for dusting


  1. Prepare a tin with baking paper and dust with tapioca flour (to stop the mix sticking) We use our Kapka Enamel Baking Trays *40% off at time of writing this!
  2. Add the gelatin and 1/2 cup of water to a bowl and and set aside to allow it to bloom,
  3. Combine the syrups, vanilla and remaining water in a pot and simmer over a low heat for a few minutes.
  4. Remove the syrup mix from the heat and add to the gelatin, using beaters to mix until it gets smooth and creamy. It will take a little while so be patient!
  5. Mix in the Davidson Plum Powder
  6. Pour the mix into the prepared tray and leave in the fridge for at least two hours or until set!
  7. Cut into squares and dust with some extra Davidson Plum powder or Icing Sugar.
