This salad is based on one I made on repeat over Summer but somehow misplaced the recipe! I loved it so much I decided to make up my own version! The chargrilled zucchini is the star of this salad and it makes the perfect BBQ side!

Ingredients


Salad Ingredients

  • Two zucchinis – cut in half and sliced (about 1cm thick) long slices
  • 1/2 red onion – cut into thin slices
  • 150 grams feta crumbled
  • 1/2 lebanese cucumber sliced
  • 1 avocado
  • 1 bag of mixed lettuce leaves
  • 1/2 lemon juiced
  • Olive oil
  • Salt and pepper
  • Fresh herbs (I used basil, parsley and dill)

Dressing Ingredients

  • 1 lemon juiced
  • 2 TBS olive oil
  • 1 tsp dijon mustard
  • 1 tsp honey
  • 1 garlic clove minced
  • sprinkle of oregano
  • Salt and pepper

Method

  1. Toss sliced zucchini in lemon juice, a drizzle of olive oil and salt and pepper
  2. BBQ the zucchini on the grill of a bbq – it should only take a few minutes each side.
  3. Combine all dressing ingredients in a jar or container, shake to combine and leave aside.
  4. Prepare your salad on a serving platter (we used our Enamel Serving Tray from the Mind Pop Range) placing lettuce down first, then onion, cucumber, zucchini, feta, avocado, dressing and the herbs sprinkled on top (see notes below)

NOTES: If you are not serving this salad straight away add the avocado, zucchini and dressing on right before serving.
