Easy Buckwheat Pikelets Posted in: Recipes – Tags: , ,

These Buckwheat Pikelets are a winner with the little ones, are gluten free and can easily be made dairy free if cooked in vegan butter or oil and served with coconut yoghurt. Simple to prepare and best served with a healthy dollop of yoghurt, drizzle of maple syrup and fresh berries.

Makes approximately 12 pikelets.

Ingredients


  • 1 apple – peeled and grated
  • 2 TBS coconut sugar
  • pinch salt and cinnamon
  • 1 cup buckwheat flour
  • 2 tsp baking powder
  • 1 egg – lightly beaten
  • 3/4 cup milk (we used almond)

Method


  1. Add grated apple to a bowl and mix with coconut sugar, cinnamon and salt.
  2. Sift flour and baking powder into another bowl and lightly whisk to combine.
  3. Add the milk, egg and apple mix to the flour and gently mix to combine with a wooden spoon. Add a little extra milk if the mixture looks too thick.
  4. Cook pikelets in butter or coconut oil on medium heat, flipping when bubbles form.
